BIANCHI – AGEING ON LEES & SKIN CONTACT

Back in the mists of time, almost all white wines were either fermented on their skins, usually in open top fermenters, at uncontrolled temperatures, or aged on lees. Skin contact refers to the length of time the juice is left in contact with the skins, while ageing on lees happens after fermentation during the maturation proccess. The longer the time of contact the greater the extraction of the components into the juice. White wines produced this way tend to suffer no sulfur additions and skip filtration, so what ends up in your glass may be a more complex wine that developed earthy colours, inevitable oxynegation and higher aromatic notes.
